Gluten Free Bread

If you want a Gluten Free Bread there is no better than a recipe by Maria Emmerich, nutritionist extraordinaire. 

The ones we buy now in our supermarkets and even health food stores have replaced wheat with potato starch or rice starch – staple – so cheap for the manufacturers and which makes us put weight on.

Far better is to use nutritious nut flours – coconut flour; almond flour and seed flours like flax-meal from linseed.

Here is her recipe for what she calls KFC Biscuits – I prefer to use it as a gluten free bread as it has a great texture – that is not so crumbly, or ‘eggy’ as her other recipes. I have taken out the sugar she suggests! It tastes delicious and is far more nutritious than manufactured ‘breads’ from the shops right now.

1 cup blanched almond flour 
1/4 tsp Celtic sea salt
1 tsp baking powder
4 egg whites
2 TBS butter (cut into pieces)

Healthy Marmalade - MarmacurdOPTIONS: add 1 tsp of garlic or your favorite spice or actually anything else that you might fancy – cherry tomatoes, walnuts, olives and make your gluten free bread to your own desire!

Preheat oven to 400 degrees F. Grease a muffin pan with coconut oil spray. Whip egg whites until very fluffy. In a separate medium bowl, mix the baking powder into the almond flour. Then cut in the butter and salt. Gently fold in the dry mixture into the whites. Dollop the dough into the muffin tin and bake for 11-15 minutes. Makes 8 servings.

NUTRITIONAL COMPARISON:
Shop bought KFC Biscuit = 180 calories, 8g fat, 4g protein, 23g carbs, 1g fiber
“Healthified” Biscuit = 118 calories, 9,6g fat, 4.8g protein, 3.4g carbs, 1.5g fiber (73% fat, 16% protein, 11% carbs)
